Oatmeal Chocolate Chip Cookies

 

 

 

_____1/2 cup margarine, softened

_____1/2 cup shortening

_____1 cup. brown sugar

_____1/2 cup sugar

_____2 eggs

_____1 tsp. vanilla

_____1 & 1/2 cups flour

_____1 tsp. baking soda

_____1 tsp. cinnamon

_____1/2 tsp. salt

_____3 cups quick cooking oatmeal

_____1 cup chocolate chips

 

 

Day 1.

 

_____________1.  In a large mixing bowl, beat together

                                margarine, shortening and sugars until creamy.

 

_____________2.  Add eggs and vanilla.  Beat together.

 

_____________3.  Add half the flour and mix until moistened.

 

_____________4.  Add baking soda, cinnamon, and salt to the bowl

                               and mix well.

 

_____________5.  Stir in oatmeal and chocolate chips and mix until

                               well blended.

 

_____________6.  Put dough into a plastic container.

 

_____________7.  Label and put in the refrigerator.

 

 

Day 2.

 

_____________1.  Adjust the oven racks.  Top rack should be second

                               shelf from the top and bottom rack should be 

                               second shelf from the bottom.

 

_____________2.  Heat oven to 350 degrees F.

 

 

_____________3.  Lightly grease cookie sheets.

 

_____________4.  Two people place heaping teaspoons of dough on 

_____________     lightly greased baking sheet, 2� apart.

 

_____________5   Put one cookie sheet on the bottom rack and one

                               on  the top.  Set timer for 5 minutes.  After timer

                               goes off rotate cookie sheets by putting top on

                               bottom and bottom on top.  Set timer for 4 more 

                               minutes.  Check for doneness and remove when

                               cookies are light brown color.

 

_____________6.  Remove cookies from the baking sheet to the

                               cooling rack.
